Stir-Fried Spring Greens
2 heads spring greens finely sliced
1 tbsp sesame oil
1 garlic clove finely diced and crushed
A pinch of turmeric
A pinch of sea salt
Heat the oil in a wide bottomed pot, sprinkling in the turmeric and garlic, stirring for a moment before adding the greens. Add salt and stir continuously on a high flame for 2-3 minutes then add a dash of cold water and allow the steam to cook greens until tender, this should only take a minute or two.
