Founder of Health Programmes, Group Leader on Penninghame Process (Primal) and Truth & Consequences
Following her successes in the restaurant and natural food consultancy business, Marie Butler, co-founder of Penninghame Foundation, has a wealth of wisdom about the health benefits of nutrition and food. Marie has long been educating others on how to use food to strengthen the body, prevent sickness and disease and on the reverse, support the body in its healing efforts if someone is suffering from illness.
‘Food as Medicine’ is a principle that Marie has strongly advocated for the past twenty years. Marie discovered the power of food as medicine as a young woman, when she healed herself from a persisting skin complaint, supported her mother in fighting terminal disease, and continued successfully resolving health problems in her environment purely through changes in people’s diet.
Moreover, keen to help fight the rapidly growing health crisis, Marie is writing a cookbook, manifesting healthy food as glamorous, tasty and exciting and dispelling the longstanding perceptions of it being boring and complicated.
Like her husband Ray, Marie Butler has also been trained by charismatic Swede, Dr Bengt Stern and other world known leaders in the field of personal development. Being trained at the Oneness University in India.
Marie Butler brings a dynamic, life affirming presence to all those she meets.

Ludwig has always had a passion for protecting and helping the environment. When he was only eight years old he discovered that trees produce oxygen so convinced his parents to plant an oak tree in the garden. His passion for permaculture was born, even though he didn’t know the word. He has always had the desire to be deeply connected with nature.
Over the years his nature connection journey has included being a scoutmaster in his late teens, organizing survival expeditions for young offenders in his twenties and living entirely off grid in Scottish woodland for four years in a self-made shelter with a wood-burning stove.
His ongoing exploration of sustainable food production systems and ways of reconnecting ourselves to our natural environment has led him to establish himself as a forest garden/permaculture designer and teacher and bush-craft mentor.
Earth Ways was created by Ludwig Appeltans in 2007 in a response to a fast-growing demand worldwide for sustainable ways of living that work in collaboration with nature rather than continually fighting against it.
He has many years’ experience of restoring natural habitats, re-introducing biodiversity, pioneering sustainable ways of growing food and harvesting bio fuels, as well as mentoring others in bush-craft and survival skills. Ludwig obtained his Permaculture Designer Certificate in 2009 from Patrick Whitefield, the foremost permaculture expert in Britain. Ludwig successfully completed a Permaculture Training of Teachers course organized by ‘Designed Visions’ in 2010.
